Subitise means to recognise how many without counting.
Conservation of number is understanding that a number always stays the same. If you do not take away or add to a quantity it will remain the same amount, no matter how you might move it about or change its arrangement.
These are both really important concepts to understand when learning about numbers and starting to count.
